Salsa Chicken

This recipe was actually called "embarrassingly easy chicken" and I think that is an appropriate name.

What you need:

  • chicken breasts, however many you will eat. They recommended six but we only made two big ones.
  • salsa, they said 2 cups but since we made less I included less
  • shredded cheese, I used Colby Jack cheese as it is a favorite in our house because it shares a name with the dog:) I think I used a whole bag, Keith likes cheese...


What you do:

  • Put the chicken in the crock pot on high and pour salsa over. Cook until chicken is done...depends on chicken size. Ours took an hour-ish, maybe longer.
  • Once it is cooked put in pan and top with however much cheese you'd like. Place it in oven at 425 degrees for 15 minutes or until cheese is melted.

Additional Changes/Ideas:
  • We both enjoyed the meal but thought it would be VERY good if it was in a tortilla. I'm wondering if I cooked the chicken longer until it was shreddable then mixed in the cheese until melted we could eat it like a fajita and make it all in the crock pot. This would be nice especially during the hot summer months when I hate to turn the oven on.
